Peach Cookies

Yes these are cookies. These Italian cookies are made to look like real peaches. The mint leaves gives them a great touch.

Prep Time: 15 mins Cook Time: 20 mins
Yields: 20 servings
Pastry Cream :
2 cups milk
4 egg yolks
1/4 cup flour
3/4 cup sugar
Lemon peels from 1 lemon
3 3/4 cups flour
3 eggs
3/4 cup milk
Zest of 1 lemon
1 tblsp baking powder
3/4 cup sugar
1/2 cup unsalted butter (melted and cooled)
Colored Dye:
2 cups apple juice 
1 cup Sugar 
Red and yellow food Coloring
Mint leaves to garnish 
Pastry Cream
-Bring milk and lemon peels to a simmer
-Remove from heat and remove lemon peels from milk
-Wisk egg yolk and sugar until thick and pale
-Mix in flour
-Pour in milk slowly and mix
-Pour back into the saucepan and cook on low until cream thickens
-Place in bowl cover with plastic wrap, to prevent a skin from forming,  and cool
-Mix flour and baking powder
-Wisk eggs in another bowl
-Add sugar and mix
-Add butter, milk and lemon zest and mix
-Add flour and mix until smooth 
-Rest for 5 mins
-Using a small ice cream scoop, roll the dough into ball
-Bake at 350°F for 20 mins
-Allow to cool completely
-Hallow out the cookies
-Fill with cream and sandwich together
-Mix red food coloring in 1 cup of apple juice and yellow in the other
-Dip cookies in red and yellow apple juice, roll in sugar and top with a mint leaf
