Pineapple Beach Cake

This tropical cake is sure to make you want to get sand in between your toes, wind in your hair and hear the soothing crashing of waves. You might enjoy this cake just as much as the Teddy Grahams.

Prep Time: 30 mins Cook Time: 25 mins
Yields: 26 servings
Ingredients:
Cake: 
2 1/4 cup flour 
1 1/4 cup sugar
2 tsp baking soda
2 eggs
20 oz crushed pineapple
Filling:
2 vanilla pudding mix(3.4oz)
20 oz crushed pineapple 
1 cup whipping cream
Frosting: 
1 cup softened unsalted butter (2 sticks)
4 cups sifted powered sugar
1 tsp vanilla
1-2 tblsp milk 
Food coloring
Decorations:
– Teddy Graham crackers
– Circles made from fondant/ circular gummies
– Pretzel sticks
– Chocolate
– Wafer sticks
– Sour patch strips
– Drink umbrellas 
– Fondant shells and surfboard
Directions:
Cake:
– Wisk flour, sugar, and baking soda together
– Add pineapple and eggs and mix until combined
– Pour into greased pan and bake at 350ยบ for 25 mins or until a toothpick inserted comes out clean
Filling: 
– Whip whipping cream until soft peaks
– Mix pudding mix and pineapple 
– Gently fold whipped cream in pineapple pudding mix and set in the fridge to chill
Frosting:
– Whip softened butter on high for about 5 mins
– Add sugar a little at a time until incorporated
– Add vanilla and mix
– Add milk until desired consistency
– Set about 3 tblsp aside for waves
– Add food coloring to the rest and mix one last time
Assembling: 
– Allow cake to cool
– Cut in half using a serrated knife or a cake leveler
– Fill cake and place top layer on
– Frost cake 
– Place decorations
